Sal Marinho Tradicional (Traditional Marine Salt)
The sea water goes to large tanks in natural clay (nurseries) during the high tides of greater magnitude. This water passes then into a sequence of tanks with decreasing depth (for sedimentation and evaporation). At the end, the water, already with a very high salt concentration, goes into small tanks (crystallization tanks) where the salt crystallizes. The water movement is done by gravity.
The salt precipitates on crystallizers. Once the salt reaches a sufficient thickness (approx. 10 cm), the bottom of the crystallizer is progressively scraped manually with the aid of suitable tools, wood (squeegee), pulling the salt to the edges of crystallizers where it is extracted from water and set to dry.
It is placed to drain and dry in the sun and wind for about 5 days in small clay tracks bordering the crystallizers and is then packaged and stored.
