Tuna’s Muxama
Tuna’s back meat is passed by coarse salt, pressed and then washed to remove excess salt. Then is dried in a controlled environment and temperature. Muxama is a product made with the same recipe Phoenicians and Romans used two thousand years ago and consists of salted and dried tuna back meat. Enjoy it as thin slices or grated. A delicacy… A kind of sea ham!
Tuna’s sangacho
Part of tuna removed from the red meat (dark muscle), with fishbones and placed in brine. Before consume it, put in water for 24 h and change the water regularly.
Tuna’s estupeta
Part of tuna resulting from trimmings during muxama preparation. Like sangacho, it is put in brine. To consume it, must desalted in advance; if you want to consume it on the same day change the water several times.
Rabinhos de atum Tuna’s tails
End part of the tuna prepared as sangacho and estupeta. To consume it do the same as mentioned for sangacho and estupeta.
Ovas de atum prensadas Pressed Roe Tuna
Tuna’s roes placed in coarse salt, pressed, washed and then dried in the drying tunnel. Like the muxama is consumed as thin slices or grated.
Tips
Try the thin slices of muxama with fresh goat cheese sprinkled with salicorne and olive oil.
